Fast Fatoush Salad

1 diced red pepper
1 diced green pepper
1 diced cucumber
1/2 cup diced red onion
1 cup halved cherry tomatoes
1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley
1 can chickpeas, drained
1 to 2 Tbsp olive oil
1 to 2 Tbsp red wine vinegar
Salt and pepper to taste
Baked whole wheat pita chips, broken into pieces


  1. Combine red pepper, green pepper, and cucumber with red onion, cherry tomatoes, and fresh mint and parsley.
  2. Mix in chickpeas.
  3. Dress with olive oil and red wine vinegar. Season to taste with salt and pepper.
  4. Toss pita chips with the salad. Delicious!
