Reading the signs…and making your own ‘Larabar’
THIS is what we call a Big-ass, Badass sign:
Yep, the sign for the expanded studio arrived Friday, and it makes quite the official announcement of our growing presence at the corner of 7th and Thomasville Road here in Tallahassee! The sign and marquee are actually grandfathered in for city codes, so it was just easiest to put a sign of the exact same size and shape as the previous business. Hence this big one!
But hey, go big or go home, right? This is a pretty busy corner, so lots of people will see this coming to and from work downtown. In the meantime, the Badass Fitness coaching team this weekend has been having some fun with it:
That is the extent of my cheerleading skills right there. Impressive, right? Pfft.
Mitzi thought of this one while running Saturday morning! Funny what running endorphins do, huh? We have started getting serious again about our training runs, because the July 4 Peachtree 10k is just around the corner and then it will be time for the Nashville Women’s Running Series half marathon in Nashville before we know it! Can’t wait!
My running lately feels really strong, even with the highest humidity like on this morning’s short run:
I give much credit to this latest round of Whole30. I’ve been following this one rigidly, yet it feels totally comfortable and pretty easy. Oh, I will be enjoying a hard cider ASAP when this is done Saturday, but most of my eating stays pretty much the same. Which means for long runs, I fuel up with sweet potato and Nuttzo plus Energy Bits, or a Larabar. I also LOVE Larabars, in pretty much every Paleo flavor, and even better with a dollop of Nuttzo on top! But this past week a student’s husband shared his HOMEMADE version, spiked with coffee beans. And these are pretty much my new favorite:
SO so good. He shared the recipe, so I am passing it along:
Jeff’s Cappucino Not-Larabars
- 1 1/2 cup of Dates
- 1/2 cup of raisins
- 1/2 cup almonds
- 1/2 cup of cashews
- 2 tablespoons of coffee beans
- 1/8 teaspoon of salt
- 1/2 teaspoon of Vanilla Extract
1. Place nuts in the food processor until chopped (but not fine).
2. Add dates, raisins, vanilla and salt.
3. Blend in the processor until it starts sticking together.
4. Form into small bars or balls.
So easy, so good. Gluten free and just sweet enough to satisfy any cravings you have!
