Cavegirl Eats: Coconut Pineapple Slaw! Hello, summer BBQ season!

pineapple slawPicCrunchy. Sweet. Tart. Savory. Just moist enough to compliment the stronger texture and smoky flavors of grilled chicken or steak.

THESE are the hallmarks of a great slaw (by the way, ‘slaw’ is a weird word…but I digress…)! And today’s recipe hits the mark in all categories. I made this up in my head as I was out on a training run for the Zooma Annapolis half marathon, knowing I needed to bring something to the wellness potluck luncheon I had scheduled the following day for the PR firm where I work.

The theme was “Healthy Crockpot Cookoff,” so I wanted something crisp, cool, sweet and refreshing to go with the menu of pulled chicken, vegetable stew, chicken chili verde and more.slawwellness

The result: This Coconut Pineapple Slaw. It rocks, basically. I love the lime and tart dressing against the sweet pineapple and currants, and the crunch of the almonds and celery. It is gluten free, Paleo, Whole 30 compliant, and just friggin’ delicious!

What I love even more is that it cook me, quite literally because I timed it, 8.5 minutes to throw together. All meals should be this easy!

This recipe makes a huge bowl, so share it for a gathering or make it Sunday and enjoy it all week – topping it with a great protein for a complete lunch or dinner meal.


Cavegirl Eats’ Pineapple Coconut Slaw


  • 3 cups shredded cabbage (I used a bagged slaw mix, easy!)
  • 1 cup broccoli slaw (another bagged mix, because why make it harder than it has to be?!)
  • 1 cup diced pineapple
  • 3 stalks celery, sliced thin
  • 3/4 cup raisins or dried currants
  • 3/4 unsweetened shredded coconut
  • 1/2 cup sliced almonds
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • Juice of 3 limes
  • Sea salt and pepper to taste


1. In a large bowl, mix everything together.

2. Done. Seriously. It’s that easy!

**Tip: This is best if tossed together a few hours or the day before serving, so the flavors can marinate and blend together.

    Got this all mixed up and in my fridge, going to use it as a side dish for my meals this coming week. Can’t wait to try it, it smells so good and looks so pretty. I ended up using shredded carrots instead of broccoli slaw though because I couldn’t find broccoli slaw at Whole Foods. The Carrots add a really nice pop of color!
